Why we built a 24/7 Member Access Farm Shop

The idea for The Pork Hut started simply.

Nathan had always wanted to sell our pork the way many farmers sell their veggies, right on the side of the road. But unlike spuds, honey or jams, we couldn’t just set up an esky or a pretty stall and lay out packs of pork. Meat needs refrigeration, power, and the right setup to keep everything safe and fresh.

So we had to get creative.

At the time we also had two young children who were still babies, another business to run, and a bush block we were slowly turning into a working farm. We tossed around all sorts of ideas. Should we open for set hours? Could we leave the shop unattended? How could we make it work without adding even more pressure to an already busy life?

Eventually Nathan came up with the idea of a membership system. Around the same time, we happened to see a couple of farmer-butchers on social media running 24/7 butcheries with secure access for members. After plenty of conversations with other small businesses and a lot of planning, The Pork Hut was born.

But then another question came up - would people really stop just for pork?

We decided to make it more than that. We started stocking everyday staples like milk, eggs, bread, honey, juice, and jams. We know exactly what it’s like to get home and realise there’s no milk left and dread the drive back to town. The Pork Hut could solve that problem too.

Bit by bit, as cashflow allowed, we worked on the setup. Suppliers started dropping off their products and the shelves slowly filled with local goodies.

Finally, we shared it on social media and asked who wanted to be part of it.

The response was incredible.

Some people didn’t follow through, but many did. Within the first month we had around 50 members, from locals in the Derwent Valley to people travelling through from as far as Huonville. People loved the convenience of secure 24/7 access - whether they were coming home from night shift, needed something quickly, or simply preferred quieter shopping without crowds.

Everything was going well…

Until we received a Cease Trading Notice from the council.

Unbeknown to us, we couldn’t simply set up a roadside stall and sell our produce like vegetable growers often do. Our little shop had to meet the same standards as any other largescale retail buildings.

So The Pork Hut closed.

What followed was a long 18-month journey of red tape, fees, fines, emails and phone calls. During that time we had to rethink parts of our business and expand our delivery service - which turned out to be a blessing in disguise.

To-date we have delivered to over 100 towns across Tasmania. If your postcode is Tasmanian, we’ll get your order to you.

Finally, in March 2026, everything was approved and signed off. After all that time, the funny thing is we barely had to change anything, just replace the door (coming soon), add some gravel in a few spots, and remove a fence post.

But the important thing is…

The Pork Hut is back.

The stress of that long process is now behind us, and we’re excited to focus on filling the shop again with our pork and other local produce.
